Best ever honeycomb

There are very few things in life as delicious as homemade treats. This time of year, I like to go traditional, and nothing seems more fitting for November than homemade honeycomb. This traditional toffee is a staple at any fireworks display, so I thought I'd show you how easy it can be to make your own!

INGREDIENTS

butter for greasing
200g caster sugar
5tbsp golden syrup
2tbsp bicarbonate of soda

METHOD

Grease your tin with butter. I like to line my tin with baking paper and grease that too.

Boil the mixture reaches the hard crack stage (150°C/300°F) remove from the heat and quickly add your bicarbonate of soda. Stir the mix until it is well combined, the mixture will bubble and fizz at this point. Pour your mixture into your prepared tin and leave to set.

Once your honeycomb has cooled and set, you can crack it! I like to make a mix of big chunky shards and smaller pieces.

I love making honeycomb for any gathering at this time of year. Especially for a fireworks night celebration. If you want to make it extra special, why not dip your shards in chocolate?
