Watercolour Easter Sugar Cookies

If you're new to baking but still want to make some sweet treats, starting with something easy like these sugar cookies might be the answer! Not only are they super easy, but the watercolour decoration is bang on trend and so effective!

 INGREDIENTS:

225g of softened butter
200g of sugar
1 egg
1 tsp vanilla
340g of self raising flour

FOR THE ICING:

royal icing
your choice of gel food colours
water
a food safe brush
butter
icing sugar

METHOD:

Preheat your oven to 190◦C

In a large bowl, cream together the butter and sugar until its light and fluffy. Beat in the egg and vanilla. Gradually mix in the flour.

Once the dough is completely mixed, roll it out on a floured surface, don't forget to also flour your rolling pin to stop the dough from sticking! Cut out your chosen shapes, I did mine as eggs and little bunny faces, but of course you can do whichever shape you like!

Bake in the oven for 8-10 minutes or until golden on a baking paper lined baking sheet.  Once your cookies are baked, remove them from the oven and leave them to stand for 2 minutes before placing them on a wire rack to cool.

Once your cookies are cool, it's time to decorate!

Roll out your royal icing on a surface sprinkled with icing sugar, again do the same to your rolling pin to stop it sticking. Once you have your icing rolled nice and thin, use the same cookie cutters to cut out matching shapes.

Mix your butter and icing sugar together to make butter icing, you only need a little, so play it by ear. This is the glue which will stick your icing to your cookies. Spread a little on the cookie and gently stick your royal icing over the top.

Now for the fun part! Mix your gel food colour with a little water, you only need a little and you want it to be a watercolour consistency, so quite thin. Use your brush to apply the colour in any way you like! I prefer the more abstract look, but of course you can do any designs you like! I added a little gold food colouring to make it extra special, I love that sparkle!

For my bunnies I used food safe marker pens to make their little faces and used the water colour technique to create the pink on their ears.

Once your colouring is dry, you have beautiful cookies that look a lot more difficult than they actually are!
