Vegan Scones & Clotted Cream



Is there anything quite as British as a scone? I've always really enjoyed baking for friends and family. A lot of my friends are vegan, but I still enjoy making them treats and it's often so easy to turn a recipe vegan, I thought I'd share my vegan scone and cream recipe for you, perfect for a late afternoon tea!




INGREDIENTS

475g self-raising flour
70g caster sugar
Tiny pinch of salt
75g vegan butter/spread
240ml soya milk
A big handful of raisins



FOR THE CREAM

50g vegan butter/spread
75g icing sugar
4 tbs coconut cream


METHOD

Preheat your oven to 200C

Line a baking tray with baking paper to avoid your scones sticking.

Mix flour, sugar and salt together in a large mixing bowl, add your butter/spread a little at a time using your hands (or a mixer if you have one) to rub it into your flour mix.

Once the butter is well incorporated, add milk slowly and mix until a soft dough forms.

At this point, you'll want to add your raisins. Turn your dough out onto a floured surface and pat the dough until it is ¾ inch thick. Cut out your scones using a cookie cutter. Place your scones onto your baking sheet and brush with a little soya milk.

Bake for 10-12 minutes until lightly golden brown.



THE CREAM

Use a mixer to mix your butter and icing sugar together to make a buttercream.

Whilst still mixing, slowly add your coconut cream a little at a time until it turns into a light fluffy cream.

Add to your scones with a little jam and enjoy!
