Bunny Butt Doughnuts

I'm all for a seasonal treat. Especially if it has a cute or fun theme. I came up with the idea of these doughnuts after seeing a few cute bunny butt cakes. I thought they were adorable! But I wanted something that could be an individual treat, so why not have a bunny butt sticking out of a doughnut hole!? They're always a real hit, which is great! And they're a great alternative to Easter eggs!


For The Doughnuts: 

225g plain flour, sifted
165g granulated sugar
1 1/2 tsp baking powder
3/4 tsp salt
3 tsp vanilla essence
3 eggs, lightly beaten
 180 ml milk
500g icing sugar
2 tbs water
green food colouring
doughnut baking mould - I use this one from Wiltons

For The Bunnies:

2 eggs
110g butter
110g caster sugar
110g self raising flour
600g white chocolate
mini marshmellows
desiccated coconut
200g pink chocolate or pink candy melts

I like to start with the bunnies (there's more steps with them than their doughnut holes!) so for these, I  preheat the oven to 200◦C. In a mixer, combine the eggs, butter, sugar and flour and mix until nice and smooth. While that's mixing grease your cake pop mould with butter. Once you have your mix, fill each half cavity to the top! (be sure you're not filling the side with the holes, sounds simple, but trust me, I've done it!) click the top half of your cake pop mould in place and bake in the oven for 10-15 minutes or until a toothpick inserted comes out clean. Remove from oven and leave them to cool.

While your bunny bums are baking, Whip up your doughnuts!  Add your dry ingredients to a bowl and mix well. In a separate bowl, mix together your wet ingredients. Slowly introduce your wet ingredients to the dry, mixing the entire time. While that's mixing, grease your doughnut pans with butter. Once you have your batter, fill your doughnut pan cavity's 3/4 of the way full. Pop these in your oven and let them bake for 10-15 minutes, or until a toothpick inserted comes out clean. Remove them from the oven and leave to cool.

Once you have your doughnuts and cake  pops cool, it's time to decorate! Melt your white chocolate in the microwave (I find the easiest way to do this is to heat it for 30 seconds and mix in between until you have smooth melted chocolate) dip each cake pop stick in the melted chocolate and insert it in your cake pop. Pop these in the fridge to set. We wot be leaving these on the sticks but it makes dipping them in the chocolate mixture a lot easier and cleaner!

While they're setting, pop a toothpick in each mini marshmallow and dip them first in the chocolate and the in the coconut. Stick these in the fridge to set.

Now I take the opportunity to glaze my doughnuts! for this, I mix together my icing sugar with some green food colouring and a little water. You want it runny but not too wet. Almost like golden syrup. Once you have your glaze, take each doughnut individually and dunk them into the glaze. Pop them on a wire rack to set.

** I always place some foil under the wire rack for easy clean up after! Trust me, you'll thank me later! **

Once this is done, your cake pops should be set enough for dunking! If the chocolate needs it, give it another quick blast in the microwave, then, take each pop and dunk it fully into the chocolate. Tap off any excess and leave standing upright to set ( a piece of polystyrene is great for this) pop back in the fridge to set completely.

While all that is setting, you can make your bunny feet! I found a bunny foot pattern I liked online and printed it out as a template. I then covered the template in cling film and used a piping bag to pipe the chocolate over the top of the template. Take your time! It can be tricky but will be worth it in the end. once you're happy with your feet, place them in the fridge to set.

Now it's simply a case of putting your bunnies together! Take your marshmallow tails off the cocktail stick and dip them in the white chocolate to stick them to your bunny cake pops. slide your cake pop stick through the doughnut hole and pull out the bottom once your bunny is in place. Use a tiny blob of chocolate to stick your bunny feet on and you're done!

These doughnuts are so sweet they're guaranteed to be a hit! It's a lot of work, but the end result is so worth it! Great for sharing or for a personal Easter treat!
