Watermelon Iced Tea

Summer is all about catching up with friends and having a nice meal and something to drink. I recently haven't really been drinking a lot of alcohol, so I wanted something yummy and different that everyone can enjoy. 




I love iced tea, peach is my favourite, but I'd never heard of watermelon iced tea and decided to give it a go! I was so excited to try it and decided to share the recipe with you.

Ingredients:

6 Tea Bags
1 Medium Watermelon
1 Cup Granulated Sugar
1 Bunch Basil - Chopped

Extra Basil Leaves For Garnish

Method:

Add 6 tea bags to 6 cups of boiled water. Let them steep for up to 10 minutes, depending on how strong you like your tea. Remove your tea bags and let the tea cool to room temperature. Chill in the fridge for at least 1 hour.

Now you can concentrate on the watermelon! Scoop out the flesh of your watermelon place it into a blender or food processor. Blend until there are no chunks and it is mainly liquid. At this point there will be a ton of pulp and seeds. You'll need to use a fine mesh strainer to get all of this out. no one wants a lumpy iced tea! Once you have the pure watermelon juice, keep it in the fridge with your tea.

Everyone knows that sweet iced tea is better than normal iced tea. And to sweeten this tea I use basil simple syrup. The great thing about this syrup? It is so simple to make! In a saucepan, bring your granulated sugar and 1 cup of water to the boil. Once it has boiled, you want to reduce it to a medium heat until all of the sugar has dissolved. Once your sugar has fully dissolved, remove from the heat and add your chopped basil. Let the basil steep in your simple syrup to add a wonderful flavour. I like to give it at least 30 minutes before I then strain out the basil and keep the flavoured syrup in a bottle in the fridge.

Once everything is made, it's really simple to put everything together before you serve.





Fill a glass with some crushed ice. In a pitcher, add your tea and watermelon juice. After this, you want to add your basil syrup. Add as much or as little as you like, the more you add, the sweeter your tea will be, so do it to your taste! Once you've sweetened your tea, add the juice of one lime and stir to combine. Pour your tea over the crushed ice in your glass and voila! It's done!

This is such a refreshing summery adult drink alternative to cocktails, which adds a touch of maturity to a meal without the alcohol.
