the best ever banana bread

Whenever Alex is ill, his mums voice gets into his head telling him he should eat more fruit, ultimately I'm sent out to get him orange juice, bananas and canned tropical fruit. He treats it like his own personal cough syrup, once he is better, he kind of ignores it, and I'm left with half a bunch of left over bananas going soft, so there is only one thing to do right?

Okay, confession time. I hate bananas. I don't like the texture, the taste or the smell. I've been told so many times that it's weird for me to dislike them so much but honestly, it's probably weirder that despite this, I love banana bread.

I have no idea why! But I almost get excited watching Alex's left over 'get well soon' 'narnas going a little brown just waiting for me to to turn them into something unbelievably delicious.

So I've decided to share that recipe with you.


200g plain flour
75g butter, softened
125g brown sugar
2 eggs
2 heaped tsp baking powder
3 ripe mashed bananas
1 tsp vanilla extract
120g Icing sugar
110ml Water


Preheat your oven to 180◦C

Sift the flour and baking powder into a large mixing bowl.

In a separate bowl, cream together the butter and sugar until it's light and fluffy.

Add the eggs, mashed bananas and vanilla extract to the butter and sugar mixture and mix well. After that, fold in the flour mixture.

Grease a loaf tin and pour the cake mixture into the tin.

This step is totally optional, but I really think it adds to the overall texture. I like to sprinkle some brown sugar over the top of the mix to add a crunch.

Bake it in the oven for about an hour, until it's well-risen and golden brown.

Once baked, remove it from the oven and leave it to cool in the tin for a few minutes, then turn it out on to a wire rack to cool completely.

I then make a simple icing by mixing together my icing sugar and water and drizzle it over my cooled loaf. I like to add a couple of walnuts on top too, but of course this is entirely optional.

Honestly, this recipe will make a banana bread lover out of anyone! It's so easy to make and so yummy!
